Pumpkin Protein Pancake

These pumpkin protein pancakes are a really simple fall recipe. They are packed with protein (19 grams per serving) to help keep you fuller for longer. A healthy and delicious start to your day. 

 

| Ingredients |

• 1/2 cup whole wheat pastry flour
• 2 scoops collagen peptides ( or 1 serving vanilla whey protein powder of choice)
• 1 1/2 teaspoons baking powder
• 1 1/2 teaspoon cinnamon
• 1/2 teaspoon ginger
• 1/4 teaspoon nutmeg
• 1/4 teaspoon salt
• 1/3 cup pumpkin puree
• 2 egg whites
• 1 teaspoon vanilla extract
• 1/4 cup + 1 tablespoon milk
• 1-2 tablespoons maple syrup (depending on preference)

 

 

| Instructions |

| 1 | Preheat a pancake griddle or pan to medium heat and grease.
| 2 | Combine all dry ingredients in a bowl.
| 3 | Combine all wet ingredients in another bowl and whisk to combine.
| 4 | Pour batter onto pan, cook approximately 1 1/ minutes per side, or until fully cooked, flipping once.
