Pumpkin Cupcakes

As their name suggests, they rise high and beautifully. They’re packed with pumpkin and warming spices and their pillowy, rounded tops are the perfect canvas for a thick slather of Spiced Buttercream Frosting. We wouldn’t change a thing about them. The recipe is easy to follow and the cupcakes themselves are the perfect antidote to a craving for sweet-‘n’-spiced fall decadence.

| Ingredients |

• 200g white light spelt flour
• 2 tablespoons natural cane sugar
• 2 teaspoons baking powder
• 2 teaspoons ground cinnamon
• 1 and half teaspoons freshly grated nutmeg
• Half teaspoon fine sea salt
• Quarter teaspoon ground allspice
• 175ml unsweetened pumpkin purée
• 250ml unsweetened almond milk
• 60ml pure maple syrup
• 60ml grapeseed oil or refined coconut oil, melted
• 1 tablespoon fresh lemon juice
• 2 teaspoons pure vanilla extract

 

| Instructions |

1 | Preheat the oven 180˚C. Lightly grease a 12-cup muffin in or line with non-stick paper.
2 | In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, baking soda, salt, allspice until combined.
3 | In a medium bowl, whisk together the pumpkin purée, milk, maple syrup, oil, lemon juice, and vanilla until smooth.
4 | Add the wet mixture to the dry mixture and stir until combined. Stop mixing as soon as there is no dry patches of flour, it's important not to overmix it will result in a dense cupcake. (The batter will be quite thick like muffin batter, this is normal).
5 | Scoop batter into the prepared muffin tin, filling them two-thirds to three-quarters full. Smooth out the top.
Bake for 24-30 minutes.
6 | Let the tin cool down. Then gentle transfer the cupcakes to the rack and let them cool completely.

Spiced Buttercream Frosting

 

| Ingredients |

• 175ml Vegan butter
• 375ml Confectioner's sugar
• 1 - 3 teaspoons almond milk
• Half teaspoon pure vanilla extract
• Half teaspoon ground cinnamon
• Quarter teaspoon freshly grated nutmeg
• Pinch of fine sea salt

 

| Instructions |

1 | In a large bowl beat butter until fluffy and smooth
2 | Add the sugar, 1 teaspoon of milk, vanilla, cinnamon, nutmeg, and salt. Beat again, until fluffy and smooth. 
If the mixture is too thick, add some milk. If it is too thin add some sugar.
